    YOu should slice them pole to pole too, because the onion's cells run pole to pole, so slicing them pole to pole breaks less of the onion's cells and leaves more onion flavor.

    I see you have a thermometer underneath your vent. I'm going to add one to my kettle. I've seen them placed opposite the vent as well. Is one side better than the other , or is it just personal preference?

    Great video Ry! I normally do tri-tip like you mentioned and am going to try one on the PBC today. I was thinking of taking it to around 110-115 then transferring to a hot charcoal to sear off. Am extra step and maybe the best of both worlds if you have tried that? Also, ever hung corn in the PBC?

    I pulled the trigger and bought one, and I am so glad I did! I already do the snake method a lot, and this tool means I don’t have to move the meat around to protect it from direct heat. Plus it gives the kettle more useable cooking space, so two racks of ribs were easy to cook without the need for a rib rack. I think if Weber sold these for a more reasonable price, these things would be more popular. The Weber Tax is real.

    Glad to see your doing well. Just made this for dinner and tested out my Thermoworks smoke with it. I brined the chicken Thursday night and let it dry in the fridge to this afternoon. Sub'd the chile oil with chile crunch. Came out juicy and sweet and spicy 🔥

    Apples are new to me, I think I’d skip frying them. Sliced (raw) tomato, and sliced beef when I have that in the fridge, are my current additions. Decades ago, I used to add hot sauce inside. Got some strong criticism over that once when did the midnight meal on a drilling rig (one job of the low man on the totem pole). This was in Canada, in winter, and I was head-sweating like crazy when we stepped out to make the next connection - too cold! One version, long ago, was a plated dish for knife and fork. Was using tomatoes, and maybe hot sauce or ketchup, but put boiled/steamed spinach on top.

    Use more wood!!! Get a split and put the whole thing in the hopper with charcoal around it. Will burn for hours. At the very least do more chubks mixed in and also throw chunks into the ash bin once there are some embers.

    I've had the original 560 since 2021 and absolutely love it. I put a stick of wood in the hopper and fill gaps with charcoal. I honestly just set it at 260 cooking on the middle grate and it holds at like 240.

    Great recipe. Only thing I would do differently is use Mayo on the outside of the bread, really is tastier and easier to toast. I do not recommend Kerry Gold for toasting. That's more of an after butter. I would recommend Land O' Lakes sweet butter with Olive Oil. Better flavor. But the mayo really is the key for a good grilled cheese. And I normally *never* use mayo on anything.

    I learned that marinade back in the 1970s from a Filipino who was a ships cook in the merchant marine. He used 7-Up but back then, it had real sugar and not high fructose corn syrup. High fructose corn syrup is different from regular corn syrup. You should avoid cooking with it. Anyway, he modified the recipe. Try it out and see what you think. Use equal parts, soy sauce and bottled Italian salad dressing. The salad dressing has all the spices that you need. And buy the cheapest brand. Then add an equal part of brown sugar. That’s it! Let the meat marinate overnight. And grill as usual. I’d like to see you use that recipe in a video. And tag me when you do. You don’t need to ketchup or banana sauce either.

      I don’t believe it’s double in construction all around, but in the lower section of the charcoal hopper where combustion happens there are ceramic plates surrounding the burn area.

    My oven only goes down to 170 so I put the handle of round wooden spoon in the door! It also let the moisture from the meat out. Came out great and THANK YOU for your video! :)

    I did one just like this (not the rub) but used the snake method for my coals. 5 hours, then wrapped and 4 more at about 300. It was better than most BBQ joints that I’ve been to by far. Just bought another at Costco. Prime for 4.19/lb. I think his comments about making sure it was tender prior to taking it off the grill irrespective of temp are spot on. Enjoy.
